The Economics of Souvlakis
A pertinent question. Why does a mixed (chicken and beef or lamb) souvlaki traditionally cost more than a single beef/lamb one when the price of chicken is lower than the price of beef/lamb thus making the profit margin on the mixed souvlaki greater?
